High-protein + Dairy-free Creamy Chicken Vegetable Soup
  1. Add carrots, celery, onion, smaller potatoes (not the halves) garlic, spices, salt, and pepper to a large pot. Drizzle olive oil and sauté over medium heat until they begin to soften (5-10 min)

  2. Add larger potatoes, raw chicken, and broth to the pot. Add extra broth or water if needed to make sure the chicken and large potatoes are fully covered

  3. Bring to a boil and then turn the heat down to medium/low and let simmer for about 30 minutes

  4. Remove chicken from the pot and shred

  5. Remove large potatoes from the pot and add to a blender with coconut milk and a little bit of broth from the pot (about ½-1 cup). Blend until smooth (make sure it's not too hot before blending)

  6. Add blended potato "cream" and shredded chicken back into pot and stir

  7. Taste for seasonings and enjoy!
