Lasagna Soup
  1. In a large pot, heat olive oil over medium heat. Add ground beef or sausage and cook until browned, breaking it up with a spoon. Drain excess grease if necessary.

  2. Add diced onion and garlic to the pot. Cook for 3-5 minutes, until softened.

  3. Stir in broth, diced tomatoes, tomato paste, Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring to a boil.

  4. Add broken lasagna noodles to the pot. Reduce heat to medium-low and simmer for 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.

  5. In a small bowl, mix ricotta cheese, mozzarella, and Parmesan.

  6. Ladle soup into bowls and top each serving with a dollop of the cheese mixture. Garnish with fresh basil or parsley if desired. Serve warm.
