In a large pot, heat olive oil over medium heat. Add ground beef or sausage and cook until browned, breaking it up with a spoon. Drain excess grease if necessary.
Add diced onion and garlic to the pot. Cook for 3-5 minutes, until softened.
Stir in broth, diced tomatoes, tomato paste, Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring to a boil.
Add broken lasagna noodles to the pot. Reduce heat to medium-low and simmer for 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
In a small bowl, mix ricotta cheese, mozzarella, and Parmesan.
Ladle soup into bowls and top each serving with a dollop of the cheese mixture. Garnish with fresh basil or parsley if desired. Serve warm.
