One-pot Shepherd's Pie Gnocchi
  1. Heat olive oil in a large pot over medium heat

  2. Add diced yellow onion and cook until softened

  3. Add ground lamb and cook until browned

  4. Stir in tomato paste and cook for 1-2 minutes

  5. Add red pepper flakes, minced garlic, and cook until fragrant

  6. Deglaze with red wine if using

  7. Add fresh thyme, rosemary, salt, pepper, Dijon mustard, and Worcestershire sauce

  8. Pour in beef broth and bring to a simmer

  9. Add gnocchi and frozen peas and carrots

  10. Cook until gnocchi is tender, about 10-15 minutes

  11. Stir in heavy cream

  12. Top with finely grated parmesan and fresh thyme for garnish

  13. Serve immediately
