Heat olive oil in a large pot over medium heat
Add diced yellow onion and cook until softened
Add ground lamb and cook until browned
Stir in tomato paste and cook for 1-2 minutes
Add red pepper flakes, minced garlic, and cook until fragrant
Deglaze with red wine if using
Add fresh thyme, rosemary, salt, pepper, Dijon mustard, and Worcestershire sauce
Pour in beef broth and bring to a simmer
Add gnocchi and frozen peas and carrots
Cook until gnocchi is tender, about 10-15 minutes
Stir in heavy cream
Top with finely grated parmesan and fresh thyme for garnish
Serve immediately
