Dice potatoes into ½–¾ inch cubes.
Optional but recommended: soak 10–15 min, then dry really well.
Boil 5–7 min until just fork-tender or microwave 4–5 min.
Drain and let them dry off a bit.
Preheat oven to 425°F.
Put your baking sheet in the oven while it heats.
Toss potatoes with oil, salt, pepper, garlic powder, paprika, and optional seasonings.
Carefully dump potatoes onto the hot baking sheet and spread into a single layer.
Cook for 20-25 min, then flip/stir.
Cook for another 10-12 min until golden and crispy.
If using onions/peppers, add them after the first 20–25 min.
Taste and adjust salt.
Optional: toss with butter at the end or sprinkle fresh herbs.
