  1. Preheat oven to 375°F and spray a 8-inch square baking dish with cooking spray.

  2. In a large bowl, mix together the oats, protein powder, almond milk, pb2, eggs, maple syrup, coconut oil, vanilla and salt.

  3. Stir in blueberries and carefully pour oatmeal mixture into the prepared baking dish. Top with additional blueberries.

  4. Bake for 35-40 minutes or until center is set. Remove from the oven and let cool for a few minutes. Portion and serve.
