Cauliflower Schnitzel With Green Goddess Sauce
  1. To make the green goddess sauce: Bring a pot of water to a rapid boil and have a bowl of ice water ready. Drop the herbs into the boiling water for 1 minute, then transfer to the ice water immediately. Squeeze out excess liquid and rough chop the herbs. Blend with all sauce ingredients until smooth, adding water if needed.

  2. To make the cauliflower schnitzel: Boil the cauliflower head whole upside down for 6 minutes. Let cool, then cut into bite-sized florets.

  3. Crush cornflakes and mix with panko, parmesan, flour, smoked paprika, onion powder, and salt in a bowl.

  4. Dip cauliflower florets in flour, then egg, and finally in the crumb mixture.

  5. Heat oil in a frying pan over medium heat. Fry cauliflower until golden brown on both sides, about a few minutes each side. Drain on paper towels and salt immediately.

  6. To plate: Smear green goddess sauce on a plate, add cauliflower on top, garnish with preserved lemon slices and grated parmesan. Serve immediately.
