Ube Puto Cake
  1. Make the meringue by beating the egg whites, ½ cup white sugar, and cream of tartar until stiff peaks form.

  2. In a separate bowl, mix the cake flour, baking powder, ¼ cup white sugar, and salt.

  3. Add the milk, ube halaya, and ube flavoring/coloring to the dry ingredients and mix until well combined.

  4. Gently fold the meringue into the ube batter.

  5. Pour the batter into a greased baking pan.

  6. Top with a generous amount of slices of cheese and salted egg.

  7. Steam the cake for 35-45 minutes or until fully cooked.
