Cook macaroni in boiling salted water until just cooked, drain & set aside
Melt butter in saucepan
Stir in flour & cook into roux
Add milk gradually, stirring constantly
Stir over medium heat until thick
Cook for a further two minutes
Add cheddar slowly & stirring constantly
Add gouda, keep stirring
Add cream cheese & sour cream, stir until mixed
Remove from heat
Add bacon & juices to sauce, and pour over pasta
Salt & pepper to taste
Serve with side salad
