Easy Christmas Gingerbread Cookies
  1. Beat the butter in a mixing bowl until creamy and soft

  2. Add the sugar and mix well

  3. Add the egg and vanilla and mix well

  4. Add half the flour and the spices, mix well, then add the remaining flour until a stiff dough forms

  5. Add the white chocolate chunks/chips and slowly mix into the dough, saving some chocolate chips for later

  6. Wet your hands, roll into balls and chill in the fridge for 1 hour or the freezer for 30 minutes

  7. Preheat the oven to 180 degrees Celsius

  8. Remove from chilling and on lined baking trays, use a spoon to slightly press the balls until two thirds of their original height

  9. Press in some of the leftover chocolate chips and bake for 12-15 minutes

  10. Remove from oven and let them firm up for 15 minutes before eating them warm
