Preheat the oven to 190C
Mince the garlic in a tray, cover with salt, oil and parmesan and mix
Add the cubed slices of bread and mix well
Roast in the oven for 15-20 minutes or until golden
Take the cavolo and kale off the stalks, finely chop and gently massage with a bit of oil
Shred the cabbage and add to the bowl
Put all the caesar dressing ingredients except for oil and water into a food processor and blitz
Slowly add in the oil until it emulsifies
Loosen with cold water
Pour the dressing over the salad and mix well
Add in the beans and croutons
Serve with more parmesan on top
