In a large skillet over medium heat, add some oil.
Add in your diced potatoes, season with salt, pepper, and garlic powder. Cover and cook for 8-10 mins. Stir occasionally.
Add in your bell peppers & onions. Season with a pinch of salt.
Cook for a few mins, until bell peppers & onions have softened.
Add in your chorizo, cook until done. (6-8mins). Adjust seasoning to your liking. Set aside.
Roast your tomatillos & serranos in the air fryer. For 8-10 mins @ 350 until tomatillos have changed color.
Add them to a blender with salt, garlic powder, onion, and handful cilantro. Blend until smooth.
Fry in a pan with a splash of oil over medium heat. Bring to simmer and then lower heat. Cover & Cook for 4-5 mins.
In a large comal over medium low heat add your tortilla. Top one half with shredded cheese, your chorizo con papa, and refried beans. Fold it up and cook until both sides are nice and golden brown.
Top with your salsa, crema, eggs, cilantro, onions, and queso fresco. Enjoy babe!
