Heat 1 tbsp Olive oil in a large soup pot and saute onion a few minutes until soft
Add chopped veggies and gently cook for 3-4 minutes. Add salt, pepper, garlic, oregano, red chili flakes, maybe onion powder.
Add 4-5 cups stock, bring to a boil, and simmer for approximately 30 minutes.
Using an immersion blender, blend until smooth.
Top with dollop of plain yogurt or shredded cheese, can also add a few TJ’s cauliflower gnocchi.
