Place chicken in the slow cooker.
Add pineapple chunks, bell peppers, onion, and garlic.
In a bowl, whisk together pineapple juice, honey, soy sauce, and ketchup.
Pour the sauce over the chicken.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Remove chicken and shred lightly if desired.
Mix cornstarch with water and stir into the slow cooker.
Cook for another 15–20 minutes until the sauce thickens.
Serve over rice and garnish with green onions or sesame seeds.
