Preheat the oven to 350°F.
To make apple filling, combine apples and cinnamon in a bowl and toss to coat evenly.
To make cinnamon sugar topping combine 2 tbsp coconut sugar with 1 tsp cinnamon and whisk well.
Add chopped dates to a small bowl with ¾ cup boiling water for ten minutes. Transfer dates and water to blender and blend until smooth.
Add date paste, eggs, maple syrup, olive oil and vanilla extract to a large bowl and whisk until thoroughly combined.
Fold in flour, baking soda, baking powder, salt and 1 tsp cinnamon until batter is smooth and uniform. Fold in half of the apples then pour batter into a greased or parchment lined 9x9 baking dish. Top batter with remaining apples and sprinkle the cinnamon mixture evenly over the top of the batter.
Bake for 45-55 minutes until a toothpick stuck into the center of the cake comes out with just a few crumbs.
To make glaze, combine ingredients in a small bowl and whisk well then drizzle generously over cake.
