Healthy Baked Fish Tacos
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

  2. In a small bowl combine chili powder, cumin, garlic powder, paprika, salt, pepper, and lime zest together. Pat fish fillets dry with a paper towel and then coat with spice mixture. Place them on the prepared sheet pan and drizzle with ½ tablespoon of olive oil.

  3. Bake for 13-15 minutes, or until fish is flaky.

  4. While the fish is baking, prepare the slaw and sauce for tacos. For the slaw, mix together the cabbage, onion, cilantro, salt, lime juice, and olive oil together. Cover and refrigerate while the fish cooks. For the sauce, whisk together mayonnaise (or yogurt), garlic powder, chipotle, and lime juice together.

  5. Remove the fish from the oven and let rest for 5 minutes and then cut fish into small bite-size pieces.

  6. Toast tortillas over a grill or gas stove in a dry skillet over medium heat for 30 seconds per side.

  7. Place fish on top of corn tortillas, top with slaw, and chipotle sauce. Serve immediately.
