Pre-heat oven to 400F (200C)
Violently pierce sweet potatoes with a fork and bake them for 45-60 minutes
Allow to cool slightly
Scoop out the sweet meat from the potatoes and mash them
Add a pinch of salt and a lot* of flour, mix until it forms a smooth ball
Knead the dough on a floured surface
Cut the dough into four smaller balls and roll each into a snake
Chop the snakes into little pillows to make the gnocchi
Cook the gnocchi in salted boiling water until they float to the surface (2-3 minutes)
Make a sauce with parsley, garlic, walnuts, lemon juice, and olive oil
Toss the cooked gnocchi in the sauce
