Sweet Potato Gnocchi
  1. Pre-heat oven to 400F (200C)

  2. Violently pierce sweet potatoes with a fork and bake them for 45-60 minutes

  3. Allow to cool slightly

  4. Scoop out the sweet meat from the potatoes and mash them

  5. Add a pinch of salt and a lot* of flour, mix until it forms a smooth ball

  6. Knead the dough on a floured surface

  7. Cut the dough into four smaller balls and roll each into a snake

  8. Chop the snakes into little pillows to make the gnocchi

  9. Cook the gnocchi in salted boiling water until they float to the surface (2-3 minutes)

  10. Make a sauce with parsley, garlic, walnuts, lemon juice, and olive oil

  11. Toss the cooked gnocchi in the sauce
