High-protein Baked Rice Pudding
  1. Preheat oven to 350°F (175°C).

  2. Add milk, cottage cheese, eggs, protein powder, sweetener, vanilla, cinnamon, and salt to a blender. Blend until completely smooth.

  3. Stir in the cooked rice and raisins if using.

  4. Divide evenly among 4 lightly greased ramekins.

  5. Place ramekins in a baking dish and add hot water to the dish until it comes halfway up the sides of the ramekins.

  6. Bake for 30–35 minutes, or until the centers are just set.

  7. Cool for 10 minutes before serving. Enjoy warm or chilled.
