Imo Mochi (potato Mochi)
  1. Boil potatoes until fork tender

  2. Use a ricer or sieve to mash potatoes until smooth with no lumps remaining

  3. Add butter and milk to mashed potatoes and stir until mixture is on the dry side

  4. Form mixture into patties and add a strip of seaweed if using

  5. Chill patties for 20 minutes

  6. In a small saucepan, combine soy sauce, mirin, sugar or honey, and water

  7. Heat sauce until sugar is dissolved

  8. Heat 2 tbsp oil in a separate pan on medium-high heat

  9. Fry patties on both sides until golden brown, about 1-2 minutes each side

  10. Remove from heat and add sauce and remaining butter to coat each mochi

  11. Carefully transfer to a plate and serve
