Thai Green Curry
  1. To make the paste, add all ingredients into a blender an blitz until smooth. If too thick, add a splash more water to loosen and help blend.

  2. To make the curry, add the coconut milk into a saucepan and cook over medium heat until it has thickened and split, roughly 10-15 minutes. Add the curry paste and cook for a few more minutes until fragrant

  3. Add the diced chicken, stock, aubergine, bamboo shoots and lime leaves, then cover and cook for 15 minutes until the chicken has cooked through.

  4. Add the red pepper and basil , season with fish sauce and sugar, then cook for 5-10 minutes more. Serve with steamed jasmine rice and top with fresh red chillies and Thai basil. Enjoy!
