Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a large bowl, mash the ripe bananas until smooth.
Add rolled oats, honey, chopped nuts, dried fruits, cinnamon, vanilla extract, and a pinch of salt. Mix until well combined.
Scoop the mixture onto the lined baking sheet to create clusters.
Bake for 20-25 minutes or until golden brown and crispy.
