Heat up a large tagine pot or regular stew pot with 1 tbsp of olive oil. Add the onions, season with 1 tsp salt and cover immediately, cook for 10 minutes on a medium low heat!
Add the tomato paste and minced garlic and cook for 5 minutes to unlock that deep tomato flavour!
Add the grated tomatoes alongside the paprika, coriander, cumin, ginger, turmeric, and salt! Mix well, bring to a simmer then cover for 10 minutes.
Combine all the ingredients to make the meatballs, mix well and roll into equal sized balls.
After about 20 minutes, add the balls to the pot and cover with a lid. Cook for 8-10 minutes covered, then remove and let simmer uncovered for a further 5 minutes to reduce the sauce!
