Giant Summer Roll
  1. Soak the rice paper wrappers in water until softened.

  2. Lay the softened wrapper on a flat surface.

  3. Layer the quinoa, carrots, cabbage, cucumber, avocado, and protein (tofu or tempeh) in the center of the wrapper.

  4. Top with fresh herbs.

  5. Fold the bottom of the wrapper over the filling, then fold in the sides and roll up tightly.

  6. Serve with peanut sauce or other dipping sauce.
