Peel Tomatoes by cutting a cross on the top or bottom side.
Place them in a large bowl and pour boiling water over them to cover.
Leave tomatoes in the water for 10-15 min.
Remove the skin with hands or a sharp knife.
Cut tomatoes into small pieces, keeping all water that drains.
Peel onions and chop fine.
Heat olive oil and sauté onions for about 2-3 min, then add tomatoes.
After 2-3 min, add the spices.
Let simmer on low heat covered with a lid for at least 20 min.
With a stick mixer, puree the soup.
Spice if necessary and serve with chopped parsley or basil.
