German Tomato Soup - Best With Fresh Ripe Tomatoes
  1. Peel Tomatoes by cutting a cross on the top or bottom side.

  2. Place them in a large bowl and pour boiling water over them to cover.

  3. Leave tomatoes in the water for 10-15 min.

  4. Remove the skin with hands or a sharp knife.

  5. Cut tomatoes into small pieces, keeping all water that drains.

  6. Peel onions and chop fine.

  7. Heat olive oil and sauté onions for about 2-3 min, then add tomatoes.

  8. After 2-3 min, add the spices.

  9. Let simmer on low heat covered with a lid for at least 20 min.

  10. With a stick mixer, puree the soup.

  11. Spice if necessary and serve with chopped parsley or basil.
