In a food processor, combine the edamame, avocado, serrano pepper, cilantro, lime zest and juice, hemp seeds, tahini, soy sauce, and sesame oil. Process until smooth.
Toast the bread slices and rub them with garlic cloves.
Spread the edamame mixture on the toasted bread slices.
Top with sauerkraut or pickled onions if desired.
Sprinkle with kosher salt to taste.
