Preheat oven to 400°F and line a baking sheet with parchment paper
Add the flour, sea salt and butter into food processor and pulse until small balls form
Add the honey, then slowly add in the water until mixed
Form a ball, then on a lightly floured surface, roll dough to ⅛ inch thickness
Use the cracker cutter to cut out the crackers and use a toothpick or skewer to poke 7-8 holes in each one
Line up on parchment paper about ½ inch apart, brush evenly with the egg wash and sprinkle with flakey salt if desired
Take the extra dough, form into a ball and roll to ⅛ inch thickness and repeat the cutting and poking steps
Bake for 8-10 minutes until golden
Let cool, then store in an airtight container up to a week
