Combine buttermilk, optional hot sauce, and marinade seasonings in a bowl. Submerge chicken tenders and refrigerate for at least 2 hours to let the magic happen.
Whisk together flour, cornstarch, dredge seasonings, and baking powder in a shallow dish.
Fill a large skillet or Dutch oven with 2-3 inches of vegetable oil and heat to 350°F (175°C). Use a thermometer for accuracy.
Remove tenders from marinade, letting excess drip off. Dredge each tender in the seasoned flour mixture, pressing gently to coat evenly. Let tenders rest on a baking sheet for 10 minutes.
Fry tenders in batches for 4-5 minutes per side, until golden brown and cooked through.
Remove fried tenders with a slotted spoon or tongs and place on a wire rack over a baking sheet to drain excess oil.
Serve immediately while they’re hot and exceptionally crunchy.
