Cook Rice: Cook rice with 1 cup water + salt. Simmer covered ~15 min, fluff.
Make Chipotle Sauce: Finely chop 1 chipotle pepper. Mix with mayo, honey, 1 tsp adobo sauce, splash of water.
Cook Chicken: Season chicken with salt + pepper. Toss in cornstarch. Pan fry in oil (medium-high): 3–4 min undisturbed, then stir until cooked. Toss hot chicken in chipotle sauce.
Cook Veg + Rice: Same pan: cook onion + pepper (5–7 min). Add splash of water, cook off. Mix into rice. Stir in cilantro sauce.
Serve: Rice base, chipotle chicken on top, finish with Parmesan.
