In a medium mixing bowl combine the mayo, mustard, nutritional yeast, turmeric, salt and pepper. Mix until well combined and smooth.
Adjust seasoning to taste.
Gently fold the tofu, diced celery, dill and chives through the mayo.
Cover and store in the fridge until ready to serve.
To assemble the sandwiches; place a layer of lettuce and egg salad on top of a slice of bread. Finish with another layer of bread and slice in half.
Serve immediately.
