Ingredients
1 lb chicken, cut into cubes
2 cups broccoli florets
16 oz orzo
32 oz chicken broth
8 oz shredded unexpected cheddar cheese
salt
pepper
garlic powder
paprika
Olive oil
Cut the chicken breasts into 1” cubes. Add salt, pepper, paprika, and garlic powder to taste.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter and cook the cubed and seasoned chicken for 5-7 min.
Then push it to the side, melt another tablespoon of butter and add in the orzo. Toss it in the melted butter and toast it for 1-2 min.
Then add in the chicken broth, stir, cover and heat on medium-low heat for 10 min.
Uncover, stir in the broccoli, cover again and heat for another 3-5 min.
Uncover, stir in half of the cheese, then top with remaining cheese, cover and heat another 1-2 min until the cheese is fully melted.
Serve, garnish with parsley if you’d like and enjoy!
