Add the egg, water, garlic, and chilli peppers to a food processor. Blend for one minute, until light and aerated.
Stream in roughly half the oil, stop then lemon juice, vinegar, and salt. Continue blending with the other half of the oil. Finish with chilli oil and lemon juice to taste.
Lasts 5-6 days in the fridge.
