Ingredients
Mix all dry ingredients thoroughly (use a whisk or shake in a sealed jar).
Taste a small pinch — if it’s not “bright” enough, you can add a little more zest powder (especially).
Apply to chicken (optionally using a little oil on meat so rub adheres).
Marinate (30 min to several hours or overnight).
Cook. After cooking, you can squeeze fresh lime juice over the meat for extra brightness as needed.
