FIDEO LOCO....talk about comfort food😋
Ingredients:
1 package (7 oz) fideo pasta or vermicelli
1 pound ground beef
½ cup diced onion
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (8 oz) tomato sauce
4 cups beef broth or water
½ teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
1 can (15 oz) pinto beans, drained and rinsed
½ cup chopped cilantro (optional)
1 jalapeño or serrano pepper, diced (optional)
Lime wedges, for serving (optional)
Instructions:
Prepare the Fideo:
In a large skillet or pot, heat a tablespoon of oil over medium heat. Add the fideo pasta and toast, stirring constantly, until golden brown. Be careful not to burn it. Once toasted, remove the fideo from the pan and set aside.
Cook the Ground Beef:
In the same skillet, add the ground beef, diced onion, and minced garlic. Cook over medium heat until the beef is browned and the onion is softened. Drain any excess fat if necessary.
Add the Seasonings and Liquid:
Stir in the diced tomatoes, tomato sauce, beef broth (or water), cumin, chili powder, paprika, salt, and black pepper. Bring the mixture to a simmer.
Combine and Simmer:
Return the toasted fideo to the pot, stirring to combine. Add the pinto beans, and if desired, the chopped cilantro and diced jalapeño or serrano pepper. Continue to simmer for about 10-15 minutes, or until the fideo is tender and the flavors are well blended.
Serve:
Serve hot, garnished with lime wedges if desired. This dish is hearty and comforting, perfect for a cozy meal.
