Combine all meatball ingredients using a stand mixer or by hand in a large bowl
Form meatballs slightly larger than golf balls on a sheet pan
Chill meatballs in refrigerator while preparing sauce
In a large pot over medium-high heat, add oil and Italian seasoning and toast for about 1 minute
Add minced onions and garlic and sauté for about 3 minutes
Add cans of crushed tomatoes, salt, and pepper to taste
Bring sauce to a simmer
Drop meatballs into sauce and simmer for about 1 hour until meatballs are cooked through and sauce reaches desired thickness
Cut hoagie rolls open and remove some of the inside to create space for filling
Layer sandwich as follows: bread, provolone slices, meatballs and sauce, shredded mozzarella, and Italian seasoning
Broil sandwich to melt cheese
Serve and enjoy
