Cherry & Ricotta Cake
  1. Preheat the oven to 160 fan/180 oven

  2. Grease and line a cake tin

  3. Beat the butter, sugar, orange zest and salt together until pale and fluffy (add the amaretto/almond essence if using)

  4. Add in the eggs, mixing well in between each addition

  5. In another bowl stir together the plain flour and baking powder

  6. Add the flour mixture into the cake batter, mix well

  7. Fold in the ricotta, pour into cake tin

  8. Mix cherries with flour, sprinkle on top of cake with demerrera sugar before baking

  9. Bake for 1 hour - 1 hour 15 minutes, or until when a skewer is inserted into the very middle of the cake, it comes out clean

  10. Cool, icing sugar, slice & eat
