Sookhi Aloo Matar Ki Sabzi
  1. In a kadhai heat the oil over a medium flame. Add cumin seeds and fry for 20 seconds. Add slit green chillies and most of the ginger slivers (leave some behind to add at the end) and fry for 1 minute

  2. Add chilli, turmeric and coriander powder stir well and cook the ground spices

  3. Add the tomatoes and mix let it soften for 2 minutes. Add boiled chunks of potato and fry for a further 2 minutes followed by the green peas

  4. Season to taste and cook over a low flame for 1 minute with the lid on. Turn the heat off add the remaining ginger slivers, coriander and chaat masala

  5. Stir well and cover letting it rest for a few minutes. Serve with dal and chapattis
