In a bowl, mix together 2 tbsp sweet dark soy sauce, 1 tbsp regular soy sauce, 1 tbsp thin soy sauce, 1 tbsp oyster sauce, 1 tbsp sugar, honey, or agave, pinch of black pepper, and 1 tsp vinegar.
Stir until the sugar dissolves and set aside.
Cook wide rice noodles in a hot pan with garlic and oil.
Add Chinese broccoli and your protein of choice.
Push everything to the side and scramble an egg.
Add noodles and pour in the sauce.
Toss on high heat until the noodles are glossy and slightly charred.
Finish with white pepper and enjoy immediately.
