You’ll only need 1 cup of unsweetened coconut milk. Freeze leftover milk in ice cube trays and add to cold brew or (dairy-free) overnight oats.
Ingredients
Blend pineapple chunks, bananas, pineapple juice, coconut milk, and lime juice in a blender until fully combined and smooth, about 2 minutes.
Transfer to an airtight container and freeze until firm, about 1 hour.
Scoop into bowls (or spoon into a piping bag fitted with a tip and pipe into bowls); garnish with pineapple wedges.
