High-protein Artichoke Dip
  1. Preheat the oven to 400°F.

  2. Thaw and drain spinach thoroughly. Use a strainer and a paper towel to absorb as much liquid as possible.

  3. In a large bowl, mix together artichoke hearts, spinach, Greek yogurt, cottage cheese, 1 cup of mozzarella, ¼ cup Parmesan cheese, and seasonings (pepper, garlic powder, and onion powder).

  4. Spray a 2-cup ramekin or small baking dishes with avocado oil spray. Pour 1 cup of the mixture into each ramekin.

  5. Sprinkle a little extra Parmesan and mozzarella cheese on top.

  6. Bake at 400°F for 25–30 minutes, until the top is lightly golden and bubbly.

  7. Broil on high for 2–3 minutes to brown the top slightly. Watch carefully to prevent burning.

  8. Let cool slightly before serving.
