In a pan, mix together all the dry ingredients, then slowly pour in the soy milk and avocado oil, stir till it's completely smooth and silky, no lumps
Heat the mixture over medium-low heat on the stove, while keep stirring
The mixture will start to thicken, lumps will form, keep stirring and folding, and eventually form a ball of dough
Take it off heat, let it cool a little but don't wait too long, as soon as you can handle the dough, start kneading and stretching it
It helps to wear some food-grade gloves to prevent sticking! Repeat stretching out the dough and folding, until the dough becomes smooth and shiny
In a dry pan, toast some glutinous rice flour over low heat for 5 minutes
Divide the dough into bite-size portions, roll out each portion into balls
Roll each ball in the toasted glutinous rice flour to prevent them from sticking to each other
In another bowl, mix together all the dip ingredients
Serve the mochi bites with the dip and chopped peanuts, enjoy!
