Heat a pot on medium/high heat with 8 cups chicken broth.
Peel and chop your carrots into halves, removing the stem. Chop your celery into halves. Remove garlic from the bulb and take out 4 cloves. Chop your onion into 2 halves, removing the outer layer.
Add in all of your vegetables to the broth, along with your seasonings, and let cook on medium/high heat for 45 mins - 1 hour, or until vegetables are soft.
Use an immersion blender, or remove the vegetables and some of the broth to a blender and blend until creamy. Add the broth back into the pot. Be careful - this broth is really HOT!
Boil a small pot of water on the stove. Once boiling, add in pasta. Let cook for 7 mins (or based on what the packaging says). Strain the pasta and then add back into the small pot you cooked it in.
In a bowl, add your cooked pasta noodles and then top with the cooked veggie broth. Optional topping: EVOO. Enjoy!
