Snickerdoodle Zucchini Bread
  1. First, preheat your oven to 350°F (175°C). Get two standard loaf pans ready by greasing and flouring them. In a large bowl, combine the vegetable oil, eggs, granulated sugar, and vanilla extract. Mix until everything is well blended.

  2. In another bowl, whisk together the all-purpose flour, cinnamon, allspice, baking soda, baking powder, and salt. Once mixed, pour this dry mixture into your wet ingredients. Beat it all together until the batter is thick and smooth. Now, fold in the grated zucchini until it’s evenly distributed.

  3. For the topping, mix the ½ cup sugar and 1 teaspoon cinnamon in a small bowl. Pour half of your zucchini bread batter into the prepared loaf pans. Sprinkle half of the cinnamon sugar mix on top. Then, add the remaining batter and finish with the rest of the topping.

  4. Bake your loaves in the preheated oven for about 45-50 minutes. You’ll know they’re done when a knife inserted in the center comes out clean. Let the bread cool before slicing it up.
