  1. Preheat the oven to 350°F. Line a loaf pan with parchment paper.

  2. In a bowl, stir together the flour, baking soda, salt, cinnamon, and ginger. Set aside. In another bowl, whisk the oil and sugar together until well blended. Add the eggs, one at a time. Stir in the flour mixture until blended, then incorporate the shredded carrots. Pour into the loaf pan and bake for 50 minutes to an hour, or until a skewer inserted into the middle comes out clean. Let cool completely before slicing. Enjoy!
