Chorizo & Black Bean Cachapas
  1. Whisk together the wet ingredients (milk, corn, eggs)

  2. In a separate bowl, mix the dry ingredients (all-purpose flour, corn flour, sugar, salt, baking powder)

  3. Fold the melted butter and mozzarella cheese into the wet ingredients

  4. Pour the batter onto a greased pan and cook until bubbles form all the way around

  5. Flip the cachapa and cook until golden brown

  6. Make a wasakaka sauce with avocado, lime, mayonnaise, and cilantro

  7. Layer the cachapa with black bean puree, chorizo, poblano peppers, and more mozzarella cheese

  8. Broil until the cheese is melted

  9. Drizzle the wasakaka sauce over the top
