Fibre-rich Fennel, Onion And Butter Bean Soup
  1. Add extra virgin olive oil to a pan and add thyme, let it gently heat

  2. Add fennel, onions and leek and let simmer on low for about 15 minutes

  3. Add chopped garlic and let simmer for another 10 minutes

  4. Add miso paste, butter beans with liquid and stock

  5. Cover and let simmer for another 5 minutes

  6. Serve with crusty bread
