In a jar with a lid, add the sauce ingredients. Add the lid and give it a good shake. Set aside.
Cut the tofu into strips, add the cornflour into a container with a lid. Add the tofu put the lid back on give it a shake till all pieces are covered.
Heat up a pan on medium heat, add some oil then the tofu and cook till all sides are nice and golden. Remove and set aside
In the same pan, add oil if needed. Add the shallots, garlic and ginger. When it caramelises add the sauce with veg, mix well then add the tofu and noodles.
Finish with some chilies, peanuts and squeeze of lime.
