Tomato, Spinach, And Avocado Egg Quesadilla
  1. Fry the Tomatoes: Heat a little oil in a non-stick skillet over medium heat. Arrange the tomato slices in a single layer in the pan. Let them sizzle for a minute.

  2. Add Greens and Cheese: Sprinkle the chopped spinach over the tomatoes, followed by a generous handful of shredded mozzarella cheese.

  3. Add Eggs: Pour the beaten eggs over the entire mixture in the pan.

  4. Add Tortilla: Immediately place the flour tortilla on top of the raw egg mixture, pressing it down gently so it sticks to the eggs.

  5. The Flip: Let the eggs cook until they are set. Once set, carefully flip the entire omelet/tortilla stack over (using a large plate or spatula) so that the tortilla is now on the bottom of the pan.

  6. Add Toppings: On one half of the circle, sprinkle more mozzarella cheese. Layer the avocado slices and red onion on top of that half. Drizzle your chosen sauce over the toppings.

  7. Fold and Finish: Fold the empty half of the tortilla over the topped half to create a semi-circle (quesadilla shape). Cook for another 1-2 minutes until the bottom tortilla is golden brown and the cheese inside is melted.

  8. Serve: Slide onto a cutting board, slice in half, and enjoy the cheesy pull!
