Cut the sweetheart cabbage into wedges
Heat the olive oil and butter in a large pan over medium-high heat
Add the cabbage wedges and char them on all sides until they have a nice golden-brown color
Reduce the heat to medium and pour in the chicken stock
Season with sea salt and fresh black pepper to taste
Cover the pan and let the cabbage braise for about 20-25 minutes until it is tender and infused with the flavors of the stock
Serve hot and enjoy
