Lusciously Gooey Chickpea Cookies
  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. Blend chickpeas, peanut butter, maple syrup, vanilla, baking powder & baking soda until smooth.

  3. Stir in chocolate chips.

  4. Scoop dough into balls (about 1.5 tablespoons each) onto the baking sheet and flatten slightly.

  5. Bake for 12-15 minutes, or until edges are lightly golden.

  6. Let the cookies cool on the baking sheet so they can firm up.
