  1. Cover the carrots in a large pinch of salt and leave for 15 minutes to draw out the liquid

  2. Combine sugar and boiling water while the carrots are salting

  3. Add white vinegar and rice vinegar to the sugar mixture

  4. Squeeze liquid out of carrots and place in a large jar

  5. Pour pickling liquid over carrots and set aside for 15 minutes

  6. Use immediately or refrigerate for better flavor over time
