Place the pears, lemon juice, and any optional flavours into a heavy-bottomed pan.
Gently heat until the pears begin to soften.
Add the jam sugar and stir until fully dissolved.
Bring to a boil and cook rapidly for 5–10 minutes, or until the setting point is reached (use a sugar thermometer or do the wrinkle test on a cold plate).
Remove any herbs or flavourings, then pour into sterilised jars and seal.
